Ponemos una olla con el fondo cubierto de aceite y dejamos calentar el aceite, cuando esté caliente añadimos la cebolla y el puerro con una pizca de sal y a fuego medio dejamos que blanquee.


- Cuando veamos que está casi transparente la cebolla, ponemos una cucharadita de pimentón y removemos, añadimos los champiñones el hueso de jamón, un chorrito de vino blanco, removemos y dejamos que se evapore el vino, mientras pasamos por agua las lentejas.

- Cuando haya evaporado, añadimos las lentejas y agua hasta cubrir, rectificamos del sal. Subimos el fuego hasta que llegue a ebullición y bajamos de nuevo a fuego medio. Dejamos que se cocinen, revisamos de vez en cuando por si fuera necesario añadir más agua, añadiremos agua en función de si nos gustan más o menos espesas.
